This recipe is based on the Almond Flour Chocolate Chip Cookie recipe (a longtime reader favorite). These cookies are soft and chewy with an oat/almond flavor.
You can add raisins or chocolate chips (or not!) depending on your preference! The next time you need to make gluten-free cookies, make these!

When it comes to almond flour there are two different types – almond flour and almond flour. Almond meal is simply made by grinding whole almonds into powder. Alternatively, almond flour is made from almonds that have been gently boiled to remove the skins before being ground into a powder.

As you can imagine peeling off the skin creates a clear, dense powder. If you can find raw almond flour I recommend it in my recipe. I always buy the big blue bag from Costco!
As long as you have a bag of almond flour, you don’t need anything special to make these cookies. Just eat like plain cookies!
Note: I like to make a double batch and store leftover cookie balls in a freezer bag or freezer safe container.

The Best Gluten Free Oatmeal Chocolate Chip Cookies
I believe you can create wonderful, gluten-free meals with everyday ingredients that anyone can enjoy. I’m here to share with you my tried and true recipes here things get better! Summer is in full swing (my favorite), we’ve been traveling a lot, and I’ve been enjoying being in the kitchen more than usual lately for some strange but surprising reason.
The base of this simple recipe, with ten ingredients, is flour, almond flour (or meal), and toasted coconut. Coconut oil increases moisture and dryness, while almond oil increases moisture and helps create a healthy environment.
Finally, they are sweetened with muscovado sugar (or coconut or brown sugar) and filled with dark chocolate. fainting

The topping is a mixture of aquafaba (almond meal chocolate chip cookies!), which helps the cookies rise and crisp the edges. Is there anything aquafaba can’t do? i don’t think so.

Just 12-15 minutes in the oven and these babies are ready to go. You can make the dough ahead of time and freeze it overnight or roll it out and freeze it for late night cravings (raise your hand if this happens to you often).
This will make a perfect cookie to have on hand for the week. If I were you, I would put them (pre-baked) in the freezer so you have a cool, dry cookie when you have a sweet tooth. (Trust me, I’m an expert – frosted cookies are where it’s at).
